Foods to eat freely
These nutrient-dense whole foods form the base of the elimination phase:

The sneaky "gotchas"
This is where people accidentally break elimination without realising:
- Nightshade spices. Paprika, cayenne, chilli flakes, and many "all-purpose" seasoning blends are nightshade-derived. Check every spice mix.
- Seed-based spices. Cumin, coriander, fennel, mustard, and nutmeg are seeds, out during elimination.
- Seed oils. Sunflower, rapeseed/canola, and "vegetable oil" hide in almost every sauce, dressing, and packaged food.
- Coffee. A seed-derived product; strict AIP removes it (herbal teas are fine).
- Hidden dairy and soy. Whey, casein, and soy lecithin appear in surprising places, always read labels.
A reliable rule: if it comes in a packet with a long ingredient list, assume it's not compliant until you've read every line.

It's easy to look at the "avoid" column and feel like AIP means losing half your diet forever. It doesn't. The elimination list is a starting point, not a permanent sentence. The entire purpose is to remove these foods briefly, then add them back one by one in the reintroduction phase to discover which ones, if any, actually affect you. Most people reintroduce and tolerate a good portion of this list.
